Combine jowar flour, rice flour, rava, salt, turmeric powder and MSG. Gradually add water and mix into a smooth batter with a pouring consistency. Cover and rest for 15 minutes.
Dry roast the grated coconut and roasted chana dal together until the coconut turns reddish. Switch off the heat and transfer to a blender jar. Add red chilli powder, garlic, salt and MSG. Grind into a fine powder.
Mix the rested batter again. Pour the batter onto a heated pan, starting from the edges and working towards the centre to form the Amboli. When it is almost roasted, spread Pud chutney over the top. Roast well, loosen the edges, fold the Amboli in half and transfer to a wire rack.
Heat oil in a pan. Add mustard seeds and allow them to splutter. Add cumin seeds, urad dal and chana dal and fry until golden. Add hing, curry leaves, sliced onion and green chilli. Sauté until the onion turns light golden. Add turmeric powder and mix well. Add the boiled potatoes and mash them slightly. Season with salt and MSG. Mix well, sprinkle with chopped coriander and stir-fry for 4–5 minutes. Cover briefly and allow the bhaji to steam.
Serve the Amboli hot with Pud chutney, green chutney and Batata Bhaji.
